according to my farmer friend who knows these things, if you’re stuck buying meat at the regular grocery store rather than at some organic temple or specialty store, the order of badness/uncleanliness goes: 1) pork; 2) chicken; 3) beef. Ground versions of them being exponentially worse than non-ground.

Also of note: bison is essentially never industrial-raised or slaughtered, because their heads are too big for traditional slaughtering equipment. So in a restaurant, you can do worse than to order a buffalo/bison burger.
